This recipe makes two loafs. It is very easy and delicious! When I make it, I tend to not measure the nuts and chocolate chips. So the amount will vary a little depending on my mood.
- 3 Cups Gluten Free Flour #1 (See Recipes)
- 1 teaspoon of salt
- 1 Cup Sugar
- 1 Cup Brown Sugar
- 2 teaspoon baking soda
- 1 (15 oz) Can Pumpkin
- 1 Cup oil
- 4 eggs, beaten
- 1/2 cup water
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 3/4 cup chopped walnuts (optional)
- 1/2 Cup Chocolate Chips (optional)
- Preheat oven to 350 Degrees
- Mix Flour, Spices, Sugar, Baking Soda, and Salt together in a bowl.
- In another bowl mix together Eggs, Pumpkin, water, and oil.
- Add dry ingredients to wet ingredients. When almost mixed add nuts and chocolate chips. Mix until blended. Grease or Line two bread pans with parchment paper.
- Pour batter evenly into the two pans
- Bake 55-60 minutes or until done.
