3/4 Cup Earth Balance
2 Eggs
1/2 tsp Vanilla or Lemon extract
2 1/2 Cups Basic Gluten Free Flour Blend #1
1 tsp baking Powder (Corn free)
1 tsp salt
- Mix together sugar and earth balance.
- Add eggs and vanilla. Set aside.
- In a small bowl mix dry ingredients together.
- Add Dry ingredients to wet ingredients until well blended.
- Cover and Refrigerate at least 1 hour.
- Preheat oven to 400 degrees Farenheight
- On a lightly floured surface roll out dough and cut into shapes,
- Place on Cookie with parchment paper.
- Back 6 - 8 minutes or until lightly browned around the edges.
- Decorate or frost as you choose.
Variation:
Peppermint Sugar Cookies: (Gluten Free, dairy Free, Soy Free, Corn Free)
- Blend in some crushed candy canes or peppermint puffs.
- optional instead of vanilla or lemon extract substitute peppermint extract.


They are yummy! My daughter and I love them. The Holiday's are not the same without sugar cookies! Of Course, we like them even more with frosting! :)
